- 
2  Large ripe tomatoes
- 
1  Tablespoon fresh
basil, chopped
- 
1  Clove garlic,
minced
- 
1  Tablespoon olive
oil
- 
¼  Pound lowfat
Mozzarella cheese
- 
Salt
 
 
 
 
 
 
     1. Cut
the tomatoes in half. Slice them thin and place them in
        
a bowl.
 
     2. Cut
the Mozzarella cheese into ½ inch bite size pieces and
        
add to the tomatoes.
 
     3. Add
the olive oil and toss to blend well. Add the garlic, basil
        
and salt. Toss to coat evenly.
 
     4. Refrigerate
and marinate for 1 hour. Serve with fresh Italian
        
bread.
