5 Ounces fresh button
¼ Cup red onion,
1 Tablespoons fresh Italian
3 Tablespoons olive oil
2 Cloves of garlic, finely
½ Pound bow tie
4 Ounces lowfat Mozzarella
¼ Teaspoon salt
Romano cheese, grated
Freshly ground black pepper
1. Peel the
mushrooms and slice them thin. Place mushrooms
in a bowl. Add the olive oil, garlic, parsley, red onion, salt and
pepper. Toss and marinate for one hour in the refrigerator.
2. Bring a
large pot of water to a boil. Add the pasta and stir.
Cook for 15 minutes or until tender.
3. When the
pasta is cooked, drain and return it to the pot. Add
the mushroom mixture and stir to blend well.
4. Serve and
garnish with the cheeses.
