Shred the potatoes and onions and place them in a
bowl. Add the salt and mix.
        
Pour off all the excess water. Add the eggs, garlic, black
pepper, parsley and
        
olive oil. Mix to blend well.
     2. Pour
the mixture into a greased 9x9 baking dish. Bake in a preheated 350ºF
oven
        
for 40
minutes to 1 hour or until golden. During the last 5 minutes, sprinkle
the top 
        
of the potato kugel with grating cheese. Cut into serving size portions
and serve.
