2  Baking potatoes
- 
4  Slices lean bacon,
diced
- 
4  Ounces lowfat
Cheddar cheese, shredded
 
 
 
 
 
 
     1. Wash
and wrap the potatoes in aluminum foil. Pierce each potato
        
with a fork. Bake the potatoes in a preheated 400° F oven for 1 hour.
 
     2. Cook
the bacon until crisp. Drain the bacon on paper towels.
 
     3. Remove
the foil from the potatoes and cut them in half lengthwise.
        
With a spoon, scoop out ¼ -½ of the potato. Use this in another
recipe.
 
     4. Sprinkle
the cheese evenly over the potatoes. Add the bacon. Bake
        
in a preheated 400º F oven until the cheese melts.
 
     5. Serve
with lowfat sour cream.
